The lines between the specialty and natural channels are blurring.

With consumer interest in premium products on the rise, specialty retailers are responding by widening the focus of their product sets. As seen during the 2018 Fancy Food Show in San Francisco last month, shoppers now expect high quality ingredients, trackable sourcing and innovative flavors across all categories, products and eating occasions.

So what trends are brands embracing to stand out in a sea of food at a time when consumer expectations are already set so high? The Project NOSH team scoured the showroom floor to find out.
